INNOVATION
Colli Fiorentini Cooperative Winery
As the Winery celebrates its fiftieth anniversary, it looks to the future with confidence—not only due to the successful human and entrepreneurial history of its members
but also thanks to their commitment to constant investment in expansion, innovation, and new technologies.
In 1996, the winery appointed an in-house enologist to work alongside external consultants, aiming to refine our wines through a relentless pursuit of product excellence. Every available tool has been employed to assist members in delivering grapes that meet the highest standards: from informative courses for farmers and vineyard management to vinification using the best techniques, including rigorous grape inspections and fermentation temperature controls in the cellar.
A pivotal moment was the 2011 installation of the FOSS system: a state-of-the-art tool for monitoring the quality of delivered grapes, which has become the heart of a virtuous and merit-based system.
In this context, environmental protection is a priority backed by concrete actions. This includes the 2011 installation of photovoltaic panels, which now cover 60% of the Cooperative’s annual electricity consumption, and a modern wastewater treatment plant completed in 2019.
In 2023, we took another significant step forward with a major investment in a new, cutting-edge technological system for our estate mill, ensuring even higher quality standards for our olive pressing. Simultaneously, we completed the redevelopment of the Gambassi collection center. These interventions testify to our ongoing commitment to enhancing our territory and modernizing production processes to offer products that are an authentic expression of excellence.
This represents an expansion of both structures and technologies—a foundation that will remain robust for many years to come.
