“Governo” is a traditional Tuscan winemaking technique dating back to the 14th century, originally used to ensure complete fermentation and stabilize the wine. The process involves selecting a batch of harvested grapes and partially drying them under controlled temperature and humidity.
These withered grapes are added after the primary alcoholic fermentation is complete. The small amount of sugar introduced through this procedure triggers a second fermentation, resulting in a wine with a residual sugar level of 5–7 g/l. This technique imparts a richer fruitiness typical of dried grapes, along with enhanced fragrance and vibrancy.
